VENUE
Famous Dave’s – Corporate Wide
LOCATION

CHALLENGE
Revitalize Famous Dave’s beverage program
SOLUTION
Taffer Consulting tasked this with a multi-phase approach. We started with a research & assessment phase in which 3 test pilot locations were selected. During this phase, we conducted multiple secret shopping programs as well as demographic and marketing analysis. This helped us further solidify the missing elements in the beverage program. In the next phase we created, branded and implemented unique signature cocktails for the Famous Dave’s corporate tasting panel. Beer, wine and soft drink merchandising was also rebranded and implemented in a new way. Moving into the next phase, our mixologist team trained the teams at the pilot locations. Bartenders, Service Staff and Managers were trained in this process, which included sales techniques, product knowledge and how to make the new cocktails. We then moved into our follow up phase for the next 2 months, which included weekly updates with the General Managers at each location. After both Taffer Consulting and Famous Dave’s were satisfied with the early phases we then rolled the new beverage program out corporate wide. The rollout included all training material and bespoke videos made exclusively for this. The final phase was letting the public new through our widespread PR and Social Media outlets.
VENUE
Azure Luxury Pool at The Venetian and Palazzo
LOCATION
Las Vegas, Nevada
CHALLENGE
Client needed brand growth and increased revenue. Staff and management had become complacent with the venue.
SOLUTION
The Venetian met with TCG shortly before the pool season started to address its concerns and shortcomings. TCG developed a new social media and marketing plan and a new entertainment lineup. These developments helped increase local and tourist attraction while ensuring retention. Azure’s social media presence increased by 75%, reaching new demographics that were previously untapped. TCG sought out new marketing partners and beverage partners that assisted with the daily party and staff development. Operating procedures and menu development made the day-to-day process for the staff and managers simpler while increasing revenue and gratuity. TCG oversaw daily operations throughout the season and brought in the highest revenue stream the property has seen to date.
VENUE
Café Americano at Caesars Palace
LOCATION
Las Vegas, Nevada
CHALLENGE
TCG met with the owners of V&E Group to go over the issues with their newest venue in Las Vegas. V&E took over an existing venue with existing staff and management from the previous ownership group. Café Americano had issues with theft, management turnover, and guest satisfaction.
SOLUTION
The project started with an analysis of daily operations and Standard Operating Procedures that were in place. TCG also reviewed inventory and audited the company’s point of sale system to search for missing products. It was discovered that the majority of theft had come from the beverage department. A Secret Shopper Program was implemented that covered each meal period and varied throughout the week. In addition to the Secret Shopper Program, new opening and closing procedures and cash handling procedures were introduced. Theft and lost product was greatly reduced and management retention increased. The Secret Shopper Program also revealed flaws in the staff’s steps of service and helped to identify unpopular menu items that needed replacement. Changes were made. The changes improved guest satisfaction and increased positive reviews on Social Media platforms.

Mercato Della Pescheria at The Venetian
LOCATION

CHALLENGE
New space for a venue and brand development for V&E Group.
SOLUTION
TCG was tasked with locating a space for V&E Group’s second location in Las Vegas and assisting with concept and brand development. Utilizing TCG’s demographic analysis process, we deemed The Venetian as the best possible location on the Las Vegas Strip for V&E Group’s project. During lease negotiations, TCG implemented a basic menu to complete concept and brand development. TCG assisted with management placement and other pre-opening tasks.

Sake Rok
LOCATION

CHALLENGE
Development of a new concept from initiation of the concept to daily post-opening operations
SOLUTION
TCG was active in the development from basic concept stages, budget, construction oversight, infrastructure needs, entertainment and more. We oversaw all hiring, on-boarding and training procedures for managers and hourly staff. TCG created the menu cues for both Food and Beverage programs. We worked hand in hand with the Chefs on flavor profiles and food costs as well as negotiating premium terms with vendors. Marketing commitments were secured with liquor and beer companies as well as beverage training classes. TCG facilitated the mock service, light service and grand opening operations as well as the day to day operations post opening. All marketing, public relations and social media were tailored by TCG to create a unique profile for Sake Rok. Sake Rok had a PR valuation exceeding $1.5mm in 2016.
